This low carb Baked Garlic Parmesan Cauliflower Mash is the perfect side dish. Full of flavor, this recipe makes a fantastic substitute for mashed potatoes.
Total Time: 50 Minutes, Servings: 6 Servings
Ingredients :
- 1 large head cauliflower
- 3 cloves garlic
- 2 ounces cream cheese
- 6 tablespoons butter
- 1 teaspoon onion salt
- 1 cup freshly grated Parmesan cheese
- 1 - 2 tablespoons fresh dill
Instructions :
- Cut up cauliflower and steam until easily pierced with a fork.
- Mash cauliflower using a mashing tool or a hand mixer. Let sit until cool enough to handle.
- Using cheesecloth or a clean dish towel, wring liquid out of cauliflower.
- Mash remaining cauliflower, and mix in all ingredients.
- Bake in oven at 350F, in a appropriate sized casserole dish, for 30 minutes, until thoroughly warms and slightly brown on top.
- Serve warm with extra Parmesan.
